Ingredients
  

For the Chicken
  • 1 pound Boneless Skinless Chicken Thighs Cut into 1-inch pieces
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Salt
  • 1/2 cup Cornstarch
For the Sauce
  • 1/2 cup Ketchup
  • 2 tablespoons Shaoxing Wine or Dry Sherry
  • 1/4 cup Rice Vinegar
  • 3 tablespoons Light Soy Sauce or Soy Sauce
  • 1 tablespoon Brown Sugar
  • 2 tablespoons Water
  • 1 tablespoon Cornstarch for sauce
For Aromatics and Vegetables
  • 1 tablespoon Peanut Oil or Vegetable Oil
  • 2 cloves Garlic Minced
  • 1 tablespoon Minced Ginger Freshly minced
  • 1 medium White Onion Chopped
  • 1 cup Bell Pepper Chopped

Method
 

Preparation
  1. Marinate Chicken: Place chicken in a bowl, drizzle with vegetable oil and sprinkle salt, mix and marinate for 10 minutes.
  2. Coat Chicken: Sprinkle cornstarch over the chicken and mix until evenly coated.
  3. Air Fry Chicken: Preheat air fryer to 450°F (230°C). Arrange chicken in a single layer, spray oil, and air fry for 8 minutes. Flip and fry for 5-6 minutes until golden brown.
  4. Prepare Sauce: In a bowl, combine ketchup, Shaoxing wine, rice vinegar, soy sauce, brown sugar, water, and cornstarch. Whisk until smooth.
  5. Sauté Aromatics: Heat skillet, add peanut oil, sauté garlic and ginger for 30 seconds until fragrant.
  6. Add Veggies: Stir in onion and bell pepper, cooking for 30 seconds until softened.
  7. Combine Sauce: Pour sauce into skillet with vegetables, simmer for 2-3 minutes until thickened.
  8. Mix with Chicken: Add chicken to skillet, gently stir to coat in sauce, and cook for 1 minute before serving.
