Preparation
- Marinate Chicken: Place chicken in a bowl, drizzle with vegetable oil and sprinkle salt, mix and marinate for 10 minutes.
- Coat Chicken: Sprinkle cornstarch over the chicken and mix until evenly coated.
- Air Fry Chicken: Preheat air fryer to 450°F (230°C). Arrange chicken in a single layer, spray oil, and air fry for 8 minutes. Flip and fry for 5-6 minutes until golden brown.
- Prepare Sauce: In a bowl, combine ketchup, Shaoxing wine, rice vinegar, soy sauce, brown sugar, water, and cornstarch. Whisk until smooth.
- Sauté Aromatics: Heat skillet, add peanut oil, sauté garlic and ginger for 30 seconds until fragrant.
- Add Veggies: Stir in onion and bell pepper, cooking for 30 seconds until softened.
- Combine Sauce: Pour sauce into skillet with vegetables, simmer for 2-3 minutes until thickened.
- Mix with Chicken: Add chicken to skillet, gently stir to coat in sauce, and cook for 1 minute before serving.
