- Stuff the chicken’s cavity with half of the diced apples, cranberries, sliced onion, and smashed garlic.
- In a large roasting pan, scatter the remaining apples and cranberries evenly across the bottom.
- Whisk together olive oil, melted butter, rosemary, and thyme. Brush this mixture over the chicken.
- Place the chicken on top of the arranged fruits and pour apple cider or chicken broth into the pan.
- Roast the chicken for about 1 hour and 20-30 minutes, basting halfway through.
- Let the chicken rest for approximately 10 minutes before carving.
- Carve the chicken and serve alongside roasted fruits, garnishing as desired.
