Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Generously season the chicken's exterior and cavity with salt and pepper.
  3. Stuff the chicken’s cavity with half of the diced apples, cranberries, sliced onion, and smashed garlic.
  4. In a large roasting pan, scatter the remaining apples and cranberries evenly across the bottom.
  5. Whisk together olive oil, melted butter, rosemary, and thyme. Brush this mixture over the chicken.
  6. Place the chicken on top of the arranged fruits and pour apple cider or chicken broth into the pan.
  7. Roast the chicken for about 1 hour and 20-30 minutes, basting halfway through.
  8. Let the chicken rest for approximately 10 minutes before carving.
  9. Carve the chicken and serve alongside roasted fruits, garnishing as desired.
