  • 1 tbsp Fresh Ginger grated, or use ground ginger
  • 2 cloves Garlic crushed, optional
  • 1.25 cups Coconut Milk or light coconut milk
  • 1 large Lemon juice and zest

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C).
  2. Season the cod fillets with salt and black pepper on both sides.
  3. In a skillet, heat olive oil over medium heat. Sauté the onion for 3-4 minutes until translucent.
  4. Add grated ginger and crushed garlic, cooking for an additional minute.
  5. Pour coconut milk into the skillet and simmer for about 3-5 minutes.
  6. Add the juice and zest of one lemon, stirring to combine.
  7. Lay the seasoned cod in a greased baking dish and pour the sauce over the fillets.
  8. Bake for 20-25 minutes until the fish flakes easily.
  9. Remove from the oven, let rest, and serve with your choice of sides.
