Preparation
- Preheat the oven to 375°F (190°C). Gather your ingredients while the oven heats up.
- Roll out the thawed puff pastry on a lightly floured surface and cut it into rectangles or circles.
- Butter the insides of your baking dish or ramekins to prevent sticking.
- Place the pastry in the prepared dishes, pressing down slightly to fit.
- In a mixing bowl, whisk together eggs and heavy cream until smooth. Add salt, pepper, thyme, and chives.
- Stir in most of the shredded cheese, saving some for topping.
- Pour the egg mixture into the pastry shells, filling them almost to the top.
- Sprinkle the reserved cheese over each filled pastry.
- Bake for 25-30 minutes until golden brown and the eggs are set.
- Remove from oven and let cool for 5-10 minutes before serving.
- Garnish with fresh parsley and serve warm.
