Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and trim excess fat from chicken pieces.
  2. Combine kosher salt, smoked paprika, Montreal chicken seasoning, minced garlic, and red pepper flakes in a bowl. Rub the mixture all over the chicken.
  3. Melt butter in a skillet over medium heat, add minced red onion, and sauté for about 3–4 minutes until translucent.
  4. Pour in chicken stock and fresh lemon juice, stir to combine, and add half of the grated Parmesan cheese.
  5. Pour the sauce over the seasoned chicken in a baking dish, sprinkle with remaining Parmesan cheese, and bake for approximately 1 hour and 45 minutes.
  6. Check internal temperature with a meat thermometer; it should reach at least 165°F (74°C).
  7. Let the chicken rest for 5–10 minutes before serving.
