- In a small saucepan, combine fresh blueberries over medium heat. Cook for 3–5 minutes, gently mashing the berries with a fork until they thicken into a syrup. Allow to cool completely.
- In a mixing bowl, add Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth and creamy, ensuring no lumps.
- Dollop the cooled blueberry syrup into the yogurt mixture in several spots and swirl gently with a toothpick to create a marbled effect.
- Prepare a parchment-lined baking sheet or silicone molds. Scoop out bite-sized rounds of the yogurt mixture and place them evenly on the prepared surface.
- Carefully place in the freezer for at least 2 hours or until set and firm. These bites will be a cool, satisfying snack.
- Transfer yogurt bites into an airtight container for storage. Enjoy frozen for up to 2 months.
