Step-by-Step Instructions
  1. Heat olive oil in a skillet over medium-high heat. Brown the lamb shanks on all sides for about 6–8 minutes.
  2. Add onion and sauté until light golden, about 5 minutes.
  3. Stir in garlic, Advieh Khoresh, and turmeric. Cook for 1–2 minutes until fragrant.
  4. Combine the lamb shanks with the onion-spice mixture, saffron water, lemon juice, bay leaves, thyme or dill, and lemon zest. Add water to submerge.
  5. Bring to a gentle boil, then reduce heat and simmer for 1.5 to 2 hours.
  6. Taste and adjust seasoning. Serve with sauce over the lamb, garnished with fresh herbs.
