- Heat olive oil in a skillet over medium-high heat. Brown the lamb shanks on all sides for about 6–8 minutes.
- Add onion and sauté until light golden, about 5 minutes.
- Stir in garlic, Advieh Khoresh, and turmeric. Cook for 1–2 minutes until fragrant.
- Combine the lamb shanks with the onion-spice mixture, saffron water, lemon juice, bay leaves, thyme or dill, and lemon zest. Add water to submerge.
- Bring to a gentle boil, then reduce heat and simmer for 1.5 to 2 hours.
- Taste and adjust seasoning. Serve with sauce over the lamb, garnished with fresh herbs.
