  • 1 medium orange peeled and segmented
  • 1 medium cucumber sliced
  • 1/4 medium red onion finely sliced
  • 1/2 cup crumbled feta cheese optional
  • 1/2 cup walnuts or pecans or sunflower/pumpkin seeds
For the Vinaigrette
  • 1/4 cup olive oil or avocado oil
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice or any citrus juice
  • 1 tablespoon honey or maple syrup maple syrup for vegan option
  • to taste salt and pepper for seasoning

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together olive oil, orange juice, lemon juice, honey (or maple syrup), and a pinch of salt and pepper until smooth.
  2. In a large mixing bowl, add mixed salad greens. Slice strawberries and segment orange, adding both to the greens. Include sliced cucumber and finely sliced red onion, tossing gently.
  3. Drizzle the prepared vinaigrette over the salad, tossing gently to coat the ingredients.
  4. Sprinkle crumbled feta cheese and toasted walnuts or pecans on top of the salad.
  5. Transfer to serving bowl or plates and optionally drizzle with extra vinaigrette before serving.
