  • 1 teaspoon Garlic Powder Optional if using fresh garlic.

Equipment

  • Skillet
  • Large pot
  • Mixing bowl

Method

Step-by-Step Instructions
  1. In a medium bowl, combine halved cherry or diced Roma tomatoes, minced garlic, balsamic vinegar, olive oil, salt, black pepper, Italian seasoning, and chopped fresh basil. Toss well and let rest for about 10 minutes.
  2. Season chicken breasts with salt, pepper, garlic powder, and paprika. Heat a skillet over medium-high heat with olive oil. Cook chicken for 4-5 minutes on each side until golden and cooked through. Let rest and slice.
  3. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, about 8-10 minutes. Drain and toss with olive oil.
  4. In the skillet, combine cooked pasta, sliced chicken, and bruschetta topping. Toss together and heat for an additional minute over low heat.
  5. Serve in bowls topped with Parmesan cheese and fresh basil. Enjoy warm!
