Method
 

Cooking Steps
  1. Bring a large pot of salted water to a rolling boil over high heat. Cook the penne pasta until al dente, about 10-12 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with Cajun seasoning, cook for about 4-5 minutes per side until golden brown. Remove from skillet.
  3. Add shrimp to the same skillet and cook until pink and opaque, about 2-3 minutes. Transfer to the plate with chicken.
  4. In the same skillet, add andouille sausage and sauté for about 2 minutes. Add bell peppers, red onion, and minced garlic, cooking for about 4 minutes until tender.
  5. Pour heavy cream into the skillet and simmer for 2-3 minutes until slightly thickened. Stir in grated Parmesan cheese until melted, adjust salt and pepper.
  6. Return chicken and shrimp to the skillet with cooked penne pasta. Toss gently to combine, heat through for another 1-2 minutes.
  7. Remove from heat and sprinkle with chopped parsley before serving.
