Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish thoroughly with butter or non-stick spray.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Add the onions, green bell peppers, and mushrooms, sauté for about 5 minutes.
  4. In a large bowl, whisk together the eggs and milk until smooth and slightly frothy.
  5. Stir in the sautéed vegetables, diced ham or bacon, and 1.5 cups of shredded cheddar cheese into the egg mixture.
  6. Pour the mixture into the prepared baking dish, spreading evenly.
  7. Sprinkle the remaining 0.5 cup of shredded cheddar cheese over the top.
  8. Bake for 30-35 minutes until the top is golden brown and a toothpick comes out clean.
  9. Allow to cool for about 5 minutes before slicing and serving warm.
