Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in a large pot over medium heat and sauté onions until translucent, about 5 minutes.
  3. Stir in cream of mushroom soup, milk, sour cream, garlic salt, mustard powder, Italian seasoning, and black pepper. Cook for 3 minutes until heated through.
  4. Mix in shredded cheddar cheese until melted and the sauce is thick and smooth, about 2-3 minutes.
  5. Add frozen broccoli and mixed vegetables, heating through for another 3-4 minutes.
  6. Remove from heat and whisk in beaten eggs and cooked rice until mixed thoroughly.
  7. Grease a 9x13-inch casserole dish and transfer the mixture into it, spreading evenly.
  8. Cover the casserole with aluminum foil and bake for 20 minutes.
  9. After 20 minutes, combine crushed Ritz crackers with melted butter and sprinkle over the casserole.
  10. Return to the oven and bake uncovered for an additional 10 minutes until golden brown.
  11. Remove from oven, let sit for a few minutes, and serve warm.
