- Preheat your oven to 350°F (175°C).
- Melt butter in a large pot over medium heat and sauté onions until translucent, about 5 minutes.
- Stir in cream of mushroom soup, milk, sour cream, garlic salt, mustard powder, Italian seasoning, and black pepper. Cook for 3 minutes until heated through.
- Mix in shredded cheddar cheese until melted and the sauce is thick and smooth, about 2-3 minutes.
- Add frozen broccoli and mixed vegetables, heating through for another 3-4 minutes.
- Remove from heat and whisk in beaten eggs and cooked rice until mixed thoroughly.
- Grease a 9x13-inch casserole dish and transfer the mixture into it, spreading evenly.
- Cover the casserole with aluminum foil and bake for 20 minutes.
- After 20 minutes, combine crushed Ritz crackers with melted butter and sprinkle over the casserole.
- Return to the oven and bake uncovered for an additional 10 minutes until golden brown.
- Remove from oven, let sit for a few minutes, and serve warm.
