  • 2 tbsp Gyro Spices blend of oregano, garlic powder, and paprika
  • 2 tbsp Olive Oil can substitute with avocado oil
For the Tzatziki
  • 1 cup Cucumber diced; zucchini can be used as a substitute
  • 1 cup Feta Cheese crumbled; Greek yogurt can be used as a lighter alternative
  • 2 cloves Garlic minced; reduce or omit for milder flavor
  • 2 tbsp Lemon Juice can substitute with vinegar
For Serving
  • 4 pieces Pita Bread substitute with whole wheat or gluten-free versions

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss chicken thighs with gyro spices and olive oil.
  3. Spread chicken thighs evenly on a baking sheet.
  4. Bake chicken for 25-30 minutes until golden brown and internal temperature reaches 165°F (74°C).
  5. While chicken bakes, mix diced cucumber, feta cheese, minced garlic, and lemon juice in a bowl to create tzatziki.
  6. Wrap pita bread in aluminum foil and place in the oven for last 5 minutes.
  7. Once chicken is done, slice into strips and assemble in warm pita with tzatziki.
