Step-by-Step Instructions
  1. Prepare the chicken by cutting it into bite-sized strips and seasoning with salt, black pepper, and crushed red pepper flakes. Set aside.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken until golden brown, about 5-7 minutes. Remove and set aside.
  3. Lower the skillet's heat, add remaining butter, and sauté garlic until fragrant, about 1 minute.
  4. Add lemon juice and ½ cup of chicken broth to deglaze the skillet. Simmer for 3-5 minutes.
  5. In a separate saucepan, cook long-grain rice with remaining chicken broth until tender, about 15-20 minutes.
  6. Stir in heavy cream and freshly grated Parmesan into the cooked rice until creamy.
  7. Return the chicken to the skillet, stir to coat with sauce, and heat through for about 2 minutes.
  8. Serve creamy Garlic Parmesan Rice and top with Chicken Scampi. Garnish with fresh parsley and additional Parmesan if desired.
