Method

Step-by-Step Instructions for Cinnamon Roll Pancakes
  1. In a large mixing bowl, whisk together milk, maple syrup, vanilla extract, and baking powder until combined. Gradually add flour, stirring gently until mostly smooth. Allow to rest for 5 minutes.
  2. In a separate bowl, blend together softened butter, ground cinnamon, and brown sugar until achieving a paste-like consistency. Transfer to a piping bag.
  3. Preheat a skillet over medium-low heat and lightly grease it. Check temperature with a drop of water; it should dance.
  4. Pour 2-3 tablespoons of batter onto the skillet. Pipe a swirl of cinnamon filling in the center. Once bubbles appear, cover with another tablespoon of batter.
  5. Flip the pancake once bubbles pop, cooking for another 2-3 minutes until golden brown. Repeat until all batter is used. Serve with cream cheese glaze or additional maple syrup.

Notes

Avoid burning the filling by covering it with batter. Resting the batter contributes to fluffiness.
