Candy Base
  • 2 cups Granulated Sugar Can use less for a less sweet version.
  • 1/2 cup Corn Syrup Can substitute with honey or agave syrup.
  • 1/4 cup Water Necessary for dissolving sugar.
  • 1 tablespoon Unflavored Gelatin Can use agar-agar for a vegan option.
  • 3/4 cup Fresh Oranges (zest & juice) Fresh is recommended for the best taste.
  • 1 tablespoon Unsalted Butter Can be omitted for a dairy-free version.

Equipment

  • Medium saucepan
  • Small bowl
  • Microplane or grater

Method

Candy Preparation
  1. Wash and zest the fresh oranges to collect about 2 tablespoons of zest, then juice the oranges for approximately 3/4 cup of juice.
  2. In a medium saucepan, combine orange juice, 1/4 cup of water, sugar, and corn syrup. Heat over medium heat, stirring until sugar dissolves, then simmer for 10 minutes.
  3. Sprinkle gelatin over 1/4 cup of cold water in a small bowl and let bloom for 5 minutes.
  4. Stir bloomed gelatin into the syrup until dissolved. Add butter and orange zest, stirring until the butter is melted.
  5. Remove from heat and let cool for 1-2 hours at room temperature until thickened.
  6. Pour the mixture into a greased dish or molds. Let set for 1-2 hours at room temperature, then refrigerate for 4-6 hours or overnight.
  7. Once set, remove from molds or dish, and cut into bite-sized pieces. Optionally toss in powdered sugar before serving.
