- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
- Mash about three overripe bananas in a large mixing bowl until smooth.
- Stir in ½ cup of melted butter until well combined.
- Add ¾ cup of sugar, the beaten egg, and 1 teaspoon of vanilla extract to the mixture and stir until smooth.
- Sprinkle in 1 teaspoon of baking soda and a pinch of salt, gently folding it into the batter.
- Gradually fold in 1 ½ cups of all-purpose flour until just incorporated; avoid overmixing.
- If desired, fold in ½ cup of walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
