Step-by-Step Instructions
  1. Start by roughly chopping dried pineapple into small, bite-sized pieces if it's not pre-cut. Set aside.
  2. In a food processor, add your cashews and pulse until they form a coarse crumb. Set aside.
  3. In a mixing bowl, combine the processed cashews, chopped dried pineapple, shredded coconut, honey or maple syrup, and melted coconut oil. Stir until well-combined and sticky.
  4. Using your hands, scoop small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Adjust with more oil or honey if too dry.
  5. Place the formed bites on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Optional: Sprinkle additional shredded coconut or cinnamon over the bites before serving.
