Cooking Instructions
  1. Begin by slicing the chicken breasts into thin cutlets, aiming for a thickness of about ½ inch. Pat them dry with a paper towel and season both sides with salt and pepper.
  2. Heat a medium skillet over medium heat, adding enough olive oil to coat the bottom. Allow the oil to heat for about 2-3 minutes until shimmering.
  3. In a mixing bowl, combine the cottage cheese, garlic powder, Italian seasoning, and grated Parmesan cheese. Stir until creamy.
  4. Take each chicken cutlet and dip it into the cottage cheese mixture, ensuring it is fully coated. Then press into breadcrumbs for an even coating.
  5. Carefully place the coated chicken cutlets in the preheated skillet, frying for about 4-5 minutes on each side until golden brown and cooked through.
  6. Transfer cooked cutlets to a plate lined with paper towels to absorb excess oil. Let them rest before serving.
