  • 1 cup Kale Chopped; spinach or Swiss chard can be used.
  • 4 large Eggs Can use egg substitutes for a vegan option.
  • 1/2 cup Milk Use plant-based milk for a dairy-free version.
  • to taste Salt Essential for enhancing flavors.
  • to taste Pepper Essential for enhancing flavors.
  • optional Shredded Cheese Choose your favorite cheese or omit for dairy-free.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil and sauté diced onion, sliced mushrooms, and diced butternut squash for 5-7 minutes.
  3. Incorporate chopped kale into the skillet and continue cooking for an additional 2-3 minutes until the kale wilts.
  4. In a separate bowl, whisk together the eggs and milk, seasoning with salt and pepper.
  5. Spread the sautéed vegetable mixture evenly across the pre-made pie crust, then pour the whisked egg mixture over the top.
  6. Bake the assembled quiche in the preheated oven for 35-40 minutes, until golden brown on top.
  7. Remove from the oven and let it cool for about 5-10 minutes before slicing and serving.
