- Preheat your oven to 375°F (190°C). Slice the baguette into 1/2-inch thick pieces and arrange them on a baking sheet. Lightly brush both sides with olive oil. Bake for 10-12 minutes, or until golden brown.
- Once baked and slightly cooled, remove the crostini from the oven. Place small pieces of Brie cheese on each toasted slice. Return to the oven and bake for another 5-7 minutes until the Brie is melty.
- After the Brie has melted, spoon a generous dollop of cranberry sauce over each crostini.
- Finely chop fresh thyme and sprinkle over the cranberry sauce. Drizzle with honey if desired. Allow to sit briefly for flavors to meld.
- Carefully transfer the crostini to a serving platter and enjoy warm.
