Preparation Steps
  1. In a large mixing bowl, add the almond butter and honey. Mix until well combined and creamy, approximately 1-2 minutes.
  2. Sprinkle in the rolled oats, dried cranberries, chopped pistachios, vanilla protein powder, sea salt, and vanilla extract. Stir until dry ingredients are evenly coated.
  3. Scoop out small amounts and roll them into 1-inch balls, yielding about 12-15 bites.
  4. Line a baking sheet with parchment paper, arranging the rolled bites leaving space between them.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Transfer to an airtight container, storing in the fridge for up to 1 week or freeze for 2 months.
