  • 1 cup heavy cream substitute with full-fat coconut cream for dairy-free
  • 1 teaspoon cinnamon to taste

  • 1 cup spelt flour can be swapped for all-purpose flour
  • 1/2 cup butter use vegan butter for dairy-free
  • 1/4 teaspoon salt fine sea salt recommended

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a pie dish with a spelt crust.
  2. Blind bake the crust for 15-20 minutes until lightly golden and set aside to cool.
  3. In a mixing bowl, combine apple butter, eggs, heavy cream, and salt. Whisk until smooth.
  4. Add in the cinnamon and nutmeg, blending until fully combined. The mixture should be creamy.
  5. Pour the filling into the cooled spelt crust and bake at 325°F (160°C) for 50-60 minutes.
  6. Once baked, cool to room temperature for about 1 hour and then refrigerate for at least 6 hours.
  7. Slice and serve, optionally topping with Maple Whipped Cream or ice cream.
