  • 1 cup shredded cheddar cheese fresh-grated is ideal

Method
 

Step-by-Step Instructions
  1. Heat the vegetable oil in a large pot over medium heat until shimmering.
  2. Add the sliced andouille sausage and cook for 3 to 4 minutes until browned.
  3. Add onion, celery, and red bell pepper; sauté for 5 to 8 minutes until softened.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add Cajun seasoning, salt, pepper, paprika, and cayenne; mix and heat for 30 seconds.
  6. Pour in chicken broth and add diced potatoes; bring to a boil, then simmer for 20 to 25 minutes.
  7. Return the sausage to the pot and mix for a couple of minutes.
  8. Stir in heavy cream and shredded cheddar cheese; simmer for 5 minutes.
  9. Ladle soup into bowls and garnish with parsley and additional cheese if desired.
