Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Break the raw cauliflower into bite-sized florets and distribute them in a casserole dish.
  3. In a medium skillet, melt the butter over medium heat. Whisk in the flour and cook until bubbly and golden.
  4. Gradually whisk in the whole milk, stirring until smooth and starting to thicken, about 3-5 minutes.
  5. Stir in the mustard, cheddar cheese, and parmesan cheese until melted. Season with salt and pepper.
  6. Pour the cheese sauce over the cauliflower florets and mix to coat.
  7. Sprinkle the remaining cheddar over the top. If using breadcrumbs, mix with melted butter and sprinkle.
  8. Cover with foil and bake for 35 minutes. Then remove foil and bake for another 10 minutes until golden.
