  • 1 cup Sour Cream Can substitute with Greek yogurt
  • 1/2 cup Mayonnaise Adjust according to preference

  • 2 whole Chipotle Peppers in Adobo Sauce Plus 1 tablespoon of the sauce
  • 2 cloves Garlic Minced or roasted
Seasoning
  • 1 tablespoon Fresh Lime Juice Fresh juice preferred
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Salt Or to taste
Consistency
  • 1 tablespoon Olive Oil Optional, improves consistency

Preparation
  1. Start by preheating a skillet over medium heat. Roast the garlic cloves in the skillet for about 5 minutes until fragrant and slightly golden.
  2. Chop the chipotle peppers for easier blending. Gather all other ingredients: sour cream, mayonnaise, lime juice, smoked paprika, cumin, and salt.
Blending
  1. In a blender, combine sour cream, mayonnaise, chopped chipotle peppers, adobo sauce, roasted garlic, fresh lime juice, smoked paprika, cumin, and salt. Blend on high for 30-60 seconds until silky smooth.
  2. Taste your sauce. For more heat, blend in another chopped chipotle pepper. Adjust the flavor with more sour cream or lime juice if needed.
Finishing Touches
  1. If the sauce is too thick, add a tablespoon of olive oil or a splash of water and blend again.
  2. Transfer the sauce into an airtight container and refrigerate for at least 30 minutes to meld the flavors.
  3. Serve the sauce as a topping for tacos, a dip for chips, or over roasted vegetables.
