Preparation
- Start by preheating a skillet over medium heat. Roast the garlic cloves in the skillet for about 5 minutes until fragrant and slightly golden.
- Chop the chipotle peppers for easier blending. Gather all other ingredients: sour cream, mayonnaise, lime juice, smoked paprika, cumin, and salt.
Blending
- In a blender, combine sour cream, mayonnaise, chopped chipotle peppers, adobo sauce, roasted garlic, fresh lime juice, smoked paprika, cumin, and salt. Blend on high for 30-60 seconds until silky smooth.
- Taste your sauce. For more heat, blend in another chopped chipotle pepper. Adjust the flavor with more sour cream or lime juice if needed.
Finishing Touches
- If the sauce is too thick, add a tablespoon of olive oil or a splash of water and blend again.
- Transfer the sauce into an airtight container and refrigerate for at least 30 minutes to meld the flavors.
- Serve the sauce as a topping for tacos, a dip for chips, or over roasted vegetables.
