  • 1/3 cup Italian dressing Greek dressing or creamy ranch can be used as alternatives.
  • pinch oregano Italian seasoning can also be used.
  • 1 cup cottage cheese Flavored cottage cheese or Greek yogurt can be used.
  • Sea Salt
  • Black Pepper

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add 12 ounces of pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Dice the medium cucumber, halve the cherry tomatoes, and slice the yellow bell pepper. Combine the veggies in a mixing bowl.
  3. Once cooled, add the pasta to the bowl with mixed vegetables. Drizzle 1/3 cup of Italian dressing and juice of one lemon over the top.
  4. Sprinkle oregano, sea salt, and black pepper over the mixture. Stir gently to combine well.
  5. Gently fold in 1 cup of cottage cheese, ensuring even distribution without breaking the pasta or veggies.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving.
