- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until it shimmers.
- Season 1 pound of boneless, skinless chicken breasts with salt and pepper, then cook for 6–8 minutes until golden brown, flipping halfway. Remove and let rest.
- In the same skillet, add 4 cloves of minced garlic with the remaining oil, sautéing for about 1 minute until fragrant.
- Pour in 1 cup of chicken broth, scraping any brown bits, and simmer for 2–3 minutes.
- Stir in 1 cup of heavy cream and ½ cup of grated Parmesan cheese, cooking for 3–4 minutes until thickened.
- Add 1 teaspoon of Italian seasoning and return the seared chicken to the skillet, stirring to coat in the sauce.
- Serve 2 cups of cooked rice in bowls, spooning the creamy garlic chicken and sauce over the rice, and adding steamed broccoli florets.
