Step-by-Step Instructions
  1. In a medium saucepan over medium heat, melt 2 tablespoons of unsalted butter until it becomes bubbly and fragrant, about 2-3 minutes.
  2. Stir in 2 tablespoons of all-purpose flour and 2 minced garlic cloves. Cook for 1 minute, stirring constantly until it becomes fragrant and smooth.
  3. Incorporate 1 teaspoon of cayenne pepper, 1 teaspoon of onion powder, 1/2 teaspoon of smoked paprika, and 1 tablespoon of spicy brown mustard into the mixture. Cook for 1-2 minutes.
  4. Gradually whisk in 1 cup of whole milk and 1 cup of Guinness. Continue stirring for 4-5 minutes until the mixture thickens.
  5. Reduce heat to low and add 1 cup of shredded sharp cheddar, 1/2 cup of shredded Swiss, and 1/2 cup of shredded Monterey Jack cheeses. Stir for 3-4 minutes until melted.
  6. Remove from heat and transfer to a serving bowl. Serve warm with pretzel bites, tortilla chips, or fresh veggies.
