  • 1 cup quick oats
  • 1 cup non-dairy milk any milk of choice
  • 2 tablespoons pistachio butter homemade or store-bought
  • 1 tablespoon maple syrup can substitute with agave syrup or honey
  • 1 teaspoon vanilla extract use pure vanilla extract
  • 1 tablespoon chia seeds omit if preferred
  • 1 teaspoon matcha powder optional
Toppings
  • 1 vegan yogurt optional
  • 1/4 cup chopped pistachios optional
  • 1/2 cup raspberries optional

Method
 

Preparation Steps
  1. In a medium mixing bowl, whisk together the quick oats, non-dairy milk, pistachio butter, maple syrup, vanilla extract, chia seeds, and matcha powder until smooth and creamy.
  2. Stir the mixture for an additional 1-2 minutes to activate the chia seeds.
  3. Transfer the oat mixture into an airtight container and refrigerate for at least 4 hours, preferably overnight.
  4. Remove from refrigerator, stir well and add a splash of non-dairy milk if too thick.
  5. Spoon the oats into bowls, top with vegan yogurt, chopped pistachios, and raspberries, and enjoy!
