Ingredients
  

For the Soup
  • 1 bunch Fresh Dill Avoid using dried for the best results.
  • 2 tablespoons Butter Can substitute with vegetable oil.
  • 1 medium Onion Finely chopped.
  • 2-3 cloves Garlic Minced.
  • 10 oz Waxy Potatoes Diced.
  • 1-2 medium Carrots Peeled and diced.
  • 2 stalks Scallions Sliced.
  • to taste Salt
  • to taste Black Pepper
  • 1 teaspoon Dried Marjoram Can be replaced with thyme or oregano.
  • 1 teaspoon Nutmeg
  • 1 teaspoon Turmeric Also gives a lovely golden color.
  • 1 leaf Bay Leaf Remove before serving.
  • 4 cups Chicken Broth Can substitute with vegetable broth for vegetarian version.
  • 1 cup Full Fat Sour Cream Serve at room temperature to prevent curdling.
  • 1 cup Frozen Green Peas Add towards the end of cooking.

Method
 

Preparation
  1. Prepare all your ingredients: peel and dice potatoes and carrots, finely chop onion, mince garlic, chop dill, and slice scallions.
  2. In a large pot, melt butter over medium-low heat. Add onion and garlic and sauté for about 1 minute until translucent.
  3. Add diced carrots and scallions, sauté for another 2 minutes until they soften.
  4. Season with salt, pepper, marjoram, nutmeg, turmeric, and bay leaf. Stir well to combine.
  5. Add potatoes and frozen peas, pour in chicken broth, bring to a boil, then simmer for 15 minutes until potatoes are tender.
  6. Remove from heat, mix in sour cream until silky, then add dill and cook uncovered for an additional 5 minutes.
  7. Taste and adjust seasoning then serve hot, garnished with chopped dill.
