  • 1 cup Ricotta Cheese part-skim, can be strained if watery
  • 1/2 teaspoon Salt adjust to taste
  • 1/4 teaspoon Pepper freshly cracked preferred
For Optional Mix-ins
  • 1/4 cup Herbs fresh, like basil or chives
  • 1/2 cup Vegetables cooked, chopped spinach or bell peppers
  • 1/2 cup Cheeses feta, cheddar, or any preferred cheese
  • 1/2 cup Cooked Meats sausage or bacon bits

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl or blender, combine well-beaten eggs with ricotta cheese, salt, and pepper. Blend until smooth.
  3. Fill silicone molds approximately 3/4 full with the egg mixture.
  4. Prepare a hot water bath by pouring hot water into the baking pan until it reaches halfway up the sides of the molds.
  5. Bake for 25 to 35 minutes or until the bites are set and firm.
  6. Let cool for a few minutes before removing from molds and cooling on a wire rack.
