  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • Salt and Pepper To taste
  • 1 cup Cream Cheese Softened
  • 1 cup Shredded Cheddar Cheese Any melty cheese can substitute
For the Optional Toppings
  • ½ cup Crumbled Bacon Optional
  • Fresh Cilantro For garnish

Method
 

Step-by-Step Instructions for Spicy Jalapeño Popper Chicken Soup
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 diced medium onion and sauté for about 5 minutes until translucent.
  2. Stir in 3 minced garlic cloves and 2 diced jalapeños. Sauté for an additional 2 minutes.
  3. Add 1 pound of chicken breasts and pour in 4 cups of chicken broth. Bring to a boil, then reduce to a simmer for 15 minutes.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Stir in 1 cup of heavy cream, 1 teaspoon of ground cumin, 1 teaspoon of paprika, and season with salt and pepper. Simmer for 5 minutes.
  6. Add 1 cup of softened cream cheese and mix until fully incorporated.
  7. Stir in 1 cup of shredded cheddar cheese and ½ cup of crumbled bacon, if using. Let it simmer for another 5 minutes.
  8. Ladle the soup into bowls and garnish with fresh cilantro. Serve warm.
