Ingredients
  

Crust
  • 26 cookies vanilla cream cookies or use graham crackers for a different flavor
  • 1/2 cup unsalted butter melted
Filling
  • 1 package strawberry gelatin powder or use raspberry or mixed berry gelatin
  • 16 oz cream cheese softened
  • 3/4 cup granulated sugar can substitute with a sugar alternative
  • 1 cup heavy cream or dairy-free alternatives
Topping
  • 1 cup powdered sugar optional
  • additional vanilla cookies for sprinkling
  • strawberry wafers for sprinkling

Method
 

Crust Preparation
  1. Crush 26 vanilla cream cookies into fine crumbs and mix with 1/2 cup melted unsalted butter. Press into a greased 10-inch springform pan and freeze for 15 minutes.
Gelatin Mixture
  1. Boil 1 cup of water, remove from heat, and dissolve 1 package of strawberry gelatin powder. Let cool for 10-15 minutes.
Cream Cheese Mixture
  1. Beat 16 oz softened cream cheese with 3/4 cup sugar until smooth. Whip 1 cup heavy cream to stiff peaks and fold into the cream cheese mixture and the cooled gelatin.
Layering
  1. Pour half of the gelatin mixture over the crust, freeze for 15 minutes, then add cream cheese mixture and top with remaining gelatin. Freeze for at least 4 hours.
Topping Preparation
  1. Crush remaining vanilla cookies and strawberry wafers for topping.
Garnishing
  1. Remove from pan, pipe whipped cream on top, sprinkle with crushed cookies and wafers, and garnish with fresh strawberries before serving.
