Crust Preparation
- Crush 26 vanilla cream cookies into fine crumbs and mix with 1/2 cup melted unsalted butter. Press into a greased 10-inch springform pan and freeze for 15 minutes.
Gelatin Mixture
- Boil 1 cup of water, remove from heat, and dissolve 1 package of strawberry gelatin powder. Let cool for 10-15 minutes.
Cream Cheese Mixture
- Beat 16 oz softened cream cheese with 3/4 cup sugar until smooth. Whip 1 cup heavy cream to stiff peaks and fold into the cream cheese mixture and the cooled gelatin.
Layering
- Pour half of the gelatin mixture over the crust, freeze for 15 minutes, then add cream cheese mixture and top with remaining gelatin. Freeze for at least 4 hours.
Topping Preparation
- Crush remaining vanilla cookies and strawberry wafers for topping.
Garnishing
- Remove from pan, pipe whipped cream on top, sprinkle with crushed cookies and wafers, and garnish with fresh strawberries before serving.

Allow the cheesecake to chill for at least 4 hours for best results. Use softened cream cheese to avoid lumps.
