Step-by-Step Instructions
  1. In a medium bowl, whisk together creamy peanut butter, coconut milk, soy sauce, lime juice, minced garlic, grated ginger, brown sugar, and sriracha/red curry paste until smooth.
  2. Place 2-3 pounds of chicken in the slow cooker, pour the peanut sauce over, and ensure each piece is coated.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  4. Remove chicken and shred, mixing it with the sauce in the slow cooker.
