- Wash and dry the apples. Peel if desired, and slice each apple into 1/2-inch wedges, removing cores and seeds.
- In a small bowl, combine cinnamon and sugar until blended.
- Organize a breading station with bowls of flour, beaten eggs, and a mixture of panko breadcrumbs and half the cinnamon-sugar.
- Dredge apple slices in flour, dip in eggs and coat with breadcrumb mixture.
- Preheat air fryer to 375°F (190°C) for about 3 minutes.
- Place coated slices in the air fryer basket in a single layer. Spray lightly with cooking spray and cook for 8-10 minutes, flipping halfway.
- Remove from air fryer, sprinkle with remaining cinnamon-sugar, and serve hot with dipping sauces.
