- In a large mixing bowl, combine shredded chicken, mayonnaise (or Greek yogurt), Parmesan cheese, eggs, panko breadcrumbs, and all-purpose flour. Add in finely chopped green onions, fresh parsley, minced garlic, smoked paprika, Italian seasoning, salt, and black pepper. Stir everything together until well-blended.
- Using moistened hands, take a portion of the mixture and form it into patties about ½ inch thick.
- In a large frying pan, pour enough vegetable or olive oil to cover the bottom, about ¼ inch deep. Heat the oil over medium heat until it shimmers, usually around 3-4 minutes.
- Carefully add the shaped patties to the hot oil. Fry each patty for 3-4 minutes on one side until golden brown. Gently flip and continue frying for another 3-4 minutes on the other side.
- Once cooked, use a slotted spatula to remove them from the pan and place on a plate lined with paper towels.
- Your crispy chicken patties are now ready to be served! Enjoy them in toasted buns, over a salad, or alongside roasted vegetables.
