Step‑by‑Step Instructions
  1. In a medium bowl, combine boneless chicken thighs with oyster sauce, soy sauce, hoisin sauce, water, Chinese five-spice powder, garlic powder, baking soda, and sugar. Mix well.
  2. Cover the bowl tightly with plastic wrap or a lid, and refrigerate the marinated chicken for at least 1 hour, up to 48 hours.
  3. Sprinkle cornstarch over the chicken pieces. Toss and massage the chicken until every piece is evenly coated.
  4. Slide the coated chicken pieces onto bamboo skewers, ensuring they aren’t tightly packed.
  5. Fill a deep pot with oil and heat it on medium-high until it reaches a temperature of 350°F (175°C).
