Ingredients
  

For the Flatbread
  • 1 cup Cottage Cheese Greek yogurt can be a substitute.
  • 2 large Eggs
  • 1 cup Oat Flour All-purpose flour can be used.
  • 1 teaspoon Garlic Powder Fresh garlic can be a substitute.
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt Adjust to taste.
  • 2 tablespoons Olive Oil
For the Chicken Filling
  • 1 pound Boneless Skinless Chicken Breasts Rotisserie chicken can be used.
  • 1 teaspoon Paprika Adjust based on spice preference.
  • 1 teaspoon Cumin Optional.
  • 1 teaspoon Chili Powder Adjust to liking.
  • 1 teaspoon Black Pepper Adjust according to taste.
For the Sauce and Toppings
  • 1 cup Greek Yogurt
  • 1 tablespoon Fresh Lemon Juice Lime juice can be swapped.
  • 2 cups Romaine Lettuce Spinach or mixed greens can be used.
  • 1 cup Cherry Tomatoes Sliced cucumbers can be used.
  • 1/2 cup Red Onion Green onions are milder.
  • 1/4 cup Fresh Parsley or Cilantro Basil can be a unique substitution.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a blender, combine cottage cheese, eggs, oat flour, garlic powder, baking powder, salt, and olive oil. Blend until smooth.
  3. Pour the mixture onto the prepared baking sheet, spreading it evenly to about ¼ inch thick. Bake for 18–22 minutes until golden brown.
  4. Once baked, let the flatbread cool for 5–7 minutes.
Chicken Preparation
  1. Season the chicken breasts with paprika, cumin, chili powder, black pepper, and salt.
  2. In a hot skillet, drizzle olive oil and sauté the chicken for 5–6 minutes on each side, until golden brown and internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
Assembly
  1. Mix Greek yogurt, lemon juice, salt, and optional garlic powder in a bowl until smooth.
  2. Slice the cooled flatbread into rectangles, layer with sliced chicken, romaine, cherry tomatoes, red onion, and drizzled yogurt sauce. Roll tightly.
  3. For extra crispiness, sear the wraps in a skillet for 1–2 minutes per side.
