- Cut the goat cheese log into approximately 24 equal pieces. Roll each piece into smooth balls.
- Freeze the cheese balls for about 30 minutes to firm them up.
- Set up three bowls: combine flour, garlic powder, and salt in one; whisk egg and milk in the second; fill the third with panko and thyme.
- Coat each cheese ball in the flour mixture, then dip in the egg wash, and finally roll in the panko mixture.
- Freeze the coated cheese balls again for another 30 minutes.
- Heat canola oil to 350°F in a heavy-bottomed pot.
- Fry the cheese balls in batches for 30 seconds to 1 minute until golden brown.
- Drain on a wire rack or paper towels and sprinkle with sea salt while hot.
- Serve warm with honey, marinara sauce, or fig preserves.
