Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, about 2-3 minutes. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the boiled gnocchi and sear for 2-3 minutes until golden-brown.
  3. Flip each gnocchi and reduce heat to medium, cooking for another 2-3 minutes until evenly crispy.
  4. Add 2 cloves of minced garlic to the skillet and sauté for about 1 minute until fragrant.
  5. Add 4 cups of fresh spinach and stir until it wilts, about 2-3 minutes. Season with salt and pepper.
  6. Sprinkle in 1 cup of crumbled feta cheese and fold into the mixture, letting it warm for a minute.
