Method
 

Directions
  1. Rinse and pat dry strawberries and cucumber. Hull strawberries and slice them, then thinly slice the cucumber.
  2. In a small bowl, whisk together lemon juice, honey, and olive oil. Season with salt and pepper until blended.
  3. In a mixing bowl, combine cucumbers and strawberries. Add cheese if using, and fold in herbs.
  4. Drizzle half the dressing over the salad and toss gently to combine without crushing fruit.
  5. Transfer to a serving dish, sprinkle with nuts/seeds and remaining herbs, and drizzle with leftover dressing. Serve immediately.
