Ingredients

For the Batter
  • 1 can Nonstick cooking spray Prevents bread from sticking; parchment paper is great for easy removal.
  • 1 stick Unsalted butter Creates a rich, nutty flavor when browned; plant-based butter works for dairy-free.
  • 3 large Ripe bananas, mashed Provides natural sweetness and moisture; overripe bananas are best for deep flavor.
  • 1 Ripe banana halved For decoration.
  • 3 large Eggs Binds the ingredients and adds moisture; substitute with flaxseed meal (1 tbsp + 2.5 tbsp water) for vegan needs.
  • 2 cups All-purpose flour Offers structure and volume; switch to whole wheat flour for a denser texture.
  • 1 cup Dark brown sugar Adds a deep molasses flavor; light brown sugar is sweeter but can be substituted.
  • 2 teaspoons Baking powder Acts as a leavening agent for a light, airy texture.
  • 1 teaspoon Ground cinnamon Enhances sweetness and warmth; use nutmeg for a spicy twist.
  • 1 teaspoon Kosher salt Balances sweetness and amplifies overall flavor.
  • ½ teaspoon Ground nutmeg Introduces a spicy depth; omit if preferred.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8.5-by-4.5-inch loaf pan with nonstick cooking spray, or line it with parchment paper.
  2. Melt 1 stick of unsalted butter in a light-colored sauté pan over medium heat, stirring frequently for 5-7 minutes until it turns golden brown and emits a nutty aroma. Allow it to cool slightly.
  3. In a medium bowl, mash 3 ripe bananas until smooth, then add 3 large eggs and mix until fully combined.
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 cup of dark brown sugar, 2 teaspoons of baking powder, 1 teaspoon of ground cinnamon, 1 teaspoon of kosher salt, and ½ teaspoon of ground nutmeg.
  5. Gently fold the dry mixture into the banana and egg mixture, then pour in the slightly cooled brown butter until just combined.
  6. Pour the batter into the prepared loaf pan, smoothing the top. Decoratively place the halved banana on top and sprinkle with dark brown sugar.
  7. Bake in the preheated oven for 70-80 minutes. After 70 minutes, use a toothpick to check for doneness. The top should be golden brown and slightly domed.
  8. Allow the loaf to cool in the pan for 10-15 minutes before transferring it to a wire rack for complete cooling. Slice and serve warm or at room temperature.

Notes

Ensure the brown butter cools slightly before mixing to prevent scrambling the eggs. Overripe bananas ensure maximum sweetness and moisture.
