  • 4 ounces Bittersweet/Semifreddo Chocolate
  • 1/2 cup Heavy Cream use coconut cream for non-dairy

Step-by-Step Instructions
  1. Prepare Dry Ingredients: In a large mixing bowl, sift together flour, cocoa powder, baking powder, and salt. Mix thoroughly and set aside.
  2. Mix Wet Ingredients: In a separate bowl, whisk together eggs and sugar until smooth. Add milk, canola oil, and vanilla extract. Combine well.
  3. Combine Mixtures: Gently fold the wet ingredients into the dry mixture until just combined; fold in chocolate chips if desired. Let batter rest for 5 minutes.
  4. Make Ganache: Combine chocolate and heavy cream in a heatproof bowl. Microwave in short bursts, stirring until melted and smooth. Set aside to cool.
  5. Cook Pancakes: Preheat skillet over medium heat, grease lightly. Pour in batter, cook until bubbles form, about 1-2 minutes. Flip and cook until golden brown.
