Lamb Skewers
  • 2 lbs Lamb Stew Meat cubed for uniform cooking

  • 2 Green Zucchini or substitute with other vegetables like bell peppers
  • 4 tbsp Olive Oil any neutral oil can also be used
  • 4 tsp Berbere Spice substitute with cumin, paprika, and a pinch of cinnamon
  • Salt and Pepper adjust to personal taste
Chicken Skewers
  • 4 Chicken Breasts sliced for even cooking
  • 1 Red Onion pearl onions may work as a milder alternative
  • 16 oz Mushrooms any preferred variety can be used
  • ½ cup Barbecue Sauce use homemade or a favorite store-bought brand

Method
 

Preparation Steps
  1. Soak wooden skewers in water for at least 30 minutes before grilling.
  2. Dice pineapple into 30-40 bite-size cubes, and mix shrimp with honey, spices, and lime juice.
  3. Skewer shrimp and pineapple alternately to create skewers.
  4. Cut lamb and zucchini into bite-sized pieces, coat with oil and spices, then skewer.
  5. Slice chicken, red onion, and mushrooms, combine with barbecue sauce, then skewer.
  6. Preheat the grill to medium-high heat.
  7. Grill skewers for 15-20 minutes, turning occasionally until cooked through.
  8. Let skewers rest before serving, adding fresh lime juice to shrimp for extra zing.
