  • 12 oz Frozen Cauliflower Microwaved
  • 1 cup Frozen Peas and Carrots Cooked and drained
For Protein
  • 1 large Egg Scrambled separately
For Aromatics
  • 1/2 cup Yellow Onion Diced
  • 2 Green Onions Chopped
  • 2 cloves Minced Garlic Fresh preferred
For Seasoning
  • 2 tbsp Soy Sauce Adjust to taste
  • 1 tbsp Oyster Sauce Optional
  • to taste Salt Adjust according to preference
  • to taste Pepper Adjust according to preference

Method
 

Preparation Steps
  1. Microwave the frozen cauliflower rice for about 6-8 minutes until fully heated. Squeeze out excess moisture using a clean kitchen towel.
  2. In a skillet, heat oil and add the frozen peas and carrots. Cook for 4-5 minutes, then drain excess liquid.
  3. Add diced yellow onion and chopped green onions to the skillet, sauté for 2-3 minutes.
  4. Push the vegetable mixture to one side and scramble the egg on the other side for 2-3 minutes, then mix with the vegetables.
  5. Return skillet to heat, add cauliflower rice, sauté for 3-4 minutes until slightly golden.
  6. Drizzle soy sauce and oyster sauce over the rice, stir for a minute till well combined.
  7. Reduce heat, fold in scrambled egg and vegetable mixture, season with salt and pepper, cook for another 2 minutes.
