  • 1 cup Frozen Peas Substitute with any mixed vegetables if desired.
For Garnishing
  • Fresh Coriander Alternatively, parsley can be used.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat for about 2 minutes until it shimmers.
  2. Add the chopped onion and sauté for 5 minutes until golden and caramelized.
  3. Stir in 3 cloves of minced garlic, 1 teaspoon of cumin, and 0.5 teaspoon of turmeric. Cook for an additional minute until fragrant.
  4. Add 1 pound of cubed chicken breasts and cook for 5-7 minutes until lightly browned.
  5. Incorporate 1 cup of rinsed basmati rice into the pot, stirring for about 2 minutes.
  6. Slowly pour in 2 cups of chicken broth, cover the pot, reduce heat to low, and allow it to simmer for 20 minutes.
  7. In the final 5 minutes, stir in 1 cup of frozen peas.
  8. Remove from heat, fluff the rice with a fork, and garnish with fresh coriander.
