- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the shredded chicken, cream cheese, mozzarella, sour cream, garlic powder, onion powder, Italian seasoning, salt, and pepper until smooth.
- Open the crescent roll dough and separate into triangles.
- Place a spoonful of filling on the wide end of each triangle and roll up, tucking in the sides.
- Brush the tops with olive oil and arrange on the baking sheet.
- Bake for 15 to 20 minutes until golden and puffed up.
- While baking, heat the sour cream and Parmesan in a saucepan until melted and smooth; season with salt and pepper.
- Remove Chicken Pillows from the oven and drizzle with sauce before serving.
- Garnish with parsley before serving.
