Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium-sized skillet, heat a drizzle of olive oil over medium heat. Add finely chopped onion and sauté for about 5 minutes until softened and translucent.
  3. In a large mixing bowl, combine the cottage cheese, sautéed onions, fresh spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Mix until well combined.
  4. Lightly grease a pie dish and pour the cottage cheese mixture into the dish. Spread evenly and top with remaining cheddar cheese.
  5. Bake for 30 to 35 minutes until set in the center and golden brown on top.
  6. Allow the quiche to cool for about 10 minutes before serving.
