- Preheat your oven to 375°F (190°C).
- In a medium-sized skillet, heat a drizzle of olive oil over medium heat. Add finely chopped onion and sauté for about 5 minutes until softened and translucent.
- In a large mixing bowl, combine the cottage cheese, sautéed onions, fresh spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Mix until well combined.
- Lightly grease a pie dish and pour the cottage cheese mixture into the dish. Spread evenly and top with remaining cheddar cheese.
- Bake for 30 to 35 minutes until set in the center and golden brown on top.
- Allow the quiche to cool for about 10 minutes before serving.
