For Garnishing
  • 1/4 cup cilantro, chopped or parsley as a substitute
  • 1 tablespoon Tajín optional; lime zest can be a substitute
For Serving
  • 2 cups thick tortilla chips

Step-by-Step Instructions
  1. Cut the chicken into 1/2-inch cubes. In a microwave-safe bowl, combine chicken with salsa and taco seasoning. Stir well and microwave on 70% power for 1-2 minutes until cooked through.
  2. In a blender, combine cottage cheese, halved cherry tomatoes, minced pickled jalapeños, and onion powder. Blend until smooth and creamy.
  3. Transfer cheese mixture to a microwave-safe bowl, stir in shredded cheese, and microwave on high for about 1 minute. Stir halfway through until melted.
  4. In a serving bowl, layer the warm cheese dip as the base and spoon the cooked chicken mixture on top.
  5. Garnish with chopped cilantro and Tajín. Serve with tortilla chips.
